Many love eating fruit in season, especially in summer when local fruit is plentiful.

But for those who think that eating a fresh raw peach or berry is the pinnacle of summer-fruit goodness, here’s something different to try: roasting.

The dry heat of roasting concentrates fruit’s flavors and natural sugars. The result is that the fruit tastes even more like itself, its flavor enhanced by the evaporation of excess moisture.

Of course, you also can enhance the flavor of fruit with some accent flavors, such as cinnamon.

The recipe below is perfect with a scoop of vanilla ice cream or just a drizzle of fresh heavy cream.
